In this month’s About Thetford magazine our pages include a recipe from Thetford Open Garden’s team member and Leaping Hare volunteer Rachel Woods. The Simnel cake is perfect for Easter or Mother’s Day, but we promised you an additional recipe from Rachel’s fellow team member and star baker Suzanne Norman. You’ll find her lovely anti-dote to too much chocolate (is that even possible?!) below.

We were also delighted to read that the incredible fundraising efforts of the Thetford Open Gardens team – Rachel Woods, Suzanne Norman, Karen-Emma White and Susan Dowling – has been recognised. They have each received a well deserved card of gratitude from the Lord Lieutenant of Norfolk for their ‘outstanding service to the community’.
Thetford Open Gardens is now in it’s 15th year and has raised well over £85,000 to date. We’re looking forward to hearing what the team have in store for us this year – exciting news coming soon, keep your eyes peeled.
Lemon Drizzle Cake Recipe
Ingredients:
175gm butter softened
175gm caster sugar
3 large eggs
175gm Self Raising flour
Grated zest and juice of 2 lemons
50 grams Icing sugar 2lb loaf tin greased or lined
Cream butter and sugar till light and fluffy.
Add eggs a little at a time.
Fold in flour.
Add zest and HALF lemon juice.
Transfer to Tin and cook for 50 /60 mins at 180°C (fan 160)
until golden and risen.
When cooked leave in tin till cool enough to handle.
Turn out of tin leave to cool completely.
Mix icing sugar with remaining juice and drizzle over top and sides .
